Tropical Thai Rice
Ingredients





Frozen Peas
(1x Cup)

Carrots (1x Cup Diced)
Red Pepper
(1x Cup Diced)

Broccoli Florets
(1x Cup)
Pineapple Pieces
(1 1/5x Cups)

Cashews
(1/4x Cup)
Limes
(2x Juiced)

Garlic
(1x Bulb)
Jasmine Rice (2x Cups)

Coconut Milk
(1x Can)
Red Curry Paste (3x Tsp)

Cilantro
(1x Bunch)

Directions

Gather and prepare all ingredients.

Rinse rice under cold water and set aside. In a pot add rice, water & coconut milk and bring to a boil. Turn heat down and simmer for 20mins or until liquid is absorbed.

While rice is cooking, sauté carrots, red pepper, frozen peas and garlic. add broccoli after 10mins of sautéing.

Once rice is done, remove from heat and give it a stir. Stir pineapple and red curry paste in with the sauté vegetables.

Add rice, cashews and cilantro. mix thoroughly and then stir in lime juice.
