Sweet Potato Boats
Ingredients

1x Ripe Avocado


Baby Spinach
(2x handfuls)


3-4x Tbsp Balsamic Glaze
Directions

1x Large Sweet Potato (sliced)
Mushrooms
(1x Cup sliced)
1x Pinch Chilli Flakes

Gather and prepare all ingredients.

Pre-heat oven at 425 Degrees. Place the sliced sweet potato on baking tray with baking paper. Cook for 35-45mins.

While potatoes are cooking heat up a frying pan on medium to low heat, sauté mushrooms and then spinach.

Once potatoes cooked, place 2 slices on plate and remaining slices in container for later in the week. Add 1/2 avocado to each slice, use fork to mash. sprinkle salt, pepper, chili flakes. Then add sautéed spinach and mushrooms.

Garnish with balsamic glaze for serving.
