Sweet Potato Boats
Ingredients

1x Large Sweet Potato (sliced)
Mushrooms
(1x Cup sliced)
1x Pinch Chilli Flakes
  1. Gather and prepare all ingredients.

  2. Pre-heat oven at 425 Degrees. Place the sliced sweet potato on baking tray with baking paper. Cook for 35-45mins. 

  3. While potatoes are cooking heat up a frying pan on medium to low heat, sauté mushrooms and then spinach. 

  4. Once potatoes cooked, place 2 slices on plate and remaining slices in container for later in the week. Add 1/2 avocado to each slice, use fork to mash. sprinkle salt, pepper, chili flakes. Then add sautéed spinach and mushrooms.

  5. Garnish with balsamic glaze for serving.
