Rainbow Salad
Ingredients

1x Beet
(Shredded)


Carrot
(1x Shredded)


Quinoa
(1/2 Cup)


Tofu
(1x Cup Cubed)

Garlic
(1x Clove)

Lemon
(1x Juiced)
Tahini
(1/4x Cup)
Mixed Greens
(2x Handfuls)
Tamari
(2x Tbsp)
Turmeric Powder
(1x Tsp)

Directions
-
Gather and prepare all ingredients.

Rinse quinoa under water, before cooking. in a pot add quinoa and double amount of water on high heat. Once boiling reduce heat to medium/low.

While quinoa is cooking saute or bake tofu marinated in tamari sauce.

Prepare salad dressing by adding all ingredients (garlic, tahini, lemon juice and turmeric) into a blender, blend low speed and gradually increase speed and add water to desired texture.

In a salad bowl place salad greens, beets and carrots in sections.

Add the cooked quinoa and tofu to salad bowl, then pour salad dressing and serve.
