Kale Chickpea Caesar Salad
Ingredients

2x Cups Broccoli (Florets)

1x Bulb Garlic (Diced)


2x Lemon
(juiced)

1x Cup Chickpeas

1/4 Cup Tahini
4x Tablespoon Oil (cold pressed)
1x Head Kale
(bite size pieces)
Directions

Gather and prepare all ingredients accordingly

Pre-Heat oven at 400-450 degrees.

Mix broccoli, lemon juice, 1 tbsp oil and garlic in a mixing bowl. Place ingredients on baking tray and bake for 15-25mins.

To make the salad dressing, in a blender add tahini, lemon juice, 1 clove garlic and 2 tbsp of oil. Blend ingredients, then add water slowly for desired texture.

In a large salad bowl place kale pieces and 1 tbsp of oil. Start massaging kale to soften them up.

Add the broccoli, chickpeas and salad dressing to the kale and mix together.
